I find peel and stick included in some kits a hinderance rather than helpful.
How do others view peel and stick issues please?
Once I have the peel&stick parts positioned correctly, I lock them in place with a small dab of thin CA.

I agree that they're generally a hinderance. Depending on the type of material. The peel and stick roofing paper I've experienced in some kits seems to give up the ghost, so to speak, as time goes on. I find rows of the shingles or rolled roofing sticking up. For that, I may still apply 3M Transfer tape to the cardstock for some extra 'stick'. For doors, window frames, etc. I add a little glue, like Dave mentioned, to the back of the material.
One advantage of doing roof cards is you can roll the peel-and-stick shingles. Use one of these rubber rollers: https://www.amazon.com/Printmaking-Diamond-Painting-Projects-Stamping/dp/B0DN1SVTJS You can also do that for other peel and stick parts you can assemble flat. Those peel and stick glues are pressure sensitive, so be sure to rub them down once things are positioned.

The particular problems i am having with a Bar Mills Kit is forming shop bay windows both outward and inward made up of multiple layers. Positioning with say canopy glue which i use for most construction would be much easier.
I could see sticking them together and then trying to fold the assembly while keeping the layers together and unwrinkled being tough. Maybe try cutting, scraping or filing a V on the inside of the bends?
