So that I can learn how things were done in the past: Re. the ice structure in front of the grocers- they would send the ice down the cute and drop into the box car from the top?

That is my understanding.  The practice is way before my time.  In this area they would cut blocks of ice from the lakes in the winter and store them all summer.  One of the materials they used for insulation in the ice houses was sawdust from the lumber mill. I have seen pictures of the process taking place on the lake less than a mile from my house.
